Vegan Creamy Cilantro Dressing

Yes it’s creamy. it’s fresh. and its plant based!

One big thing I always here about people that are thinking about going vegan/vegetarian but are hesitant is : “But I want to enjoy my food” Yes! Everyone should enjoy food, food should bring pleasure, taste good and make you feel even better!

There’s a big misconception here that vegan food is not tasty, and I might have to put partial blame on restaurants that serve vegetables and salads with no dressing or seasoning… as their “vegan option”

What accentuates the flavors of our foods are the beautiful combinations between herbs and spices we create. The best part is, there are endless combinations, each resulting in different flavors and making one veggie taste a thousand different ways!

Here I’m sharing a super easy vegan dressing you can pour on top of your salad, baked veggies, sandwich or pasta for that extra fresh kick and it’s got a plus its healthy and nourishing all at once.

This is a cilantro dressing, all you need is: 

  • 1 cup of fresh cilantro
  • 1/2 a cup of soaked cashews  ( overnight or 15 minutes in boiling water)
  • 1 fresh lime juice
  • a food processor or a blender

Throw your ingredients into the food processor or your high power blender and blend it until desired consistency. If you wish to have something less creamy and more liquidly, add about half a cup of water.

Once it is blended enjoy with your food of choice!
